Fish Tacos & Pickled Cole Slaw (0 personal points)

4 servings (1/4 fish + 1/4 cole slaw)


Ingredients:

1 pound white fish

1 tbsp smoked paprika

1 tbsp cumin

1 tsp table salt

2 cups packaged cole slaw mix

2 medium scallions, sliced

1/4 cup apple cider vinegar

1 tbsp splenda

1 tsp mustard


Directions:

Cut the fish into 1" cubes. Season with the smoked paprika, cumin and salt. Set aside.

Prepare the cole slaw by mixing the veggies and scallions in a medium bowl. Set aside.

Whisk together the vinegar, splenda and mustard. Pour over the veggies and mix well. Let sit for at least 30 minutes.

Air fry or pan fry (in a lightly sprayed skillet) the fish until cooked through.

Serve on tortillas with the coleslaw.


Suggested Serving: Serve with a squeeze of lime and a drizzle of wasabi yogurt sauce.
