2 servings (1/2 mixture each)
Ingredients:
4 large eggs
8 oz banana, ripe and mashed
1 tsp ground cinnamon
1 tsp vanilla extract
Directions:
In a medium bowl, combine all the ingredients and mix well.
Heat a sprayed skillet on medium heat. Pour in the mixture.
Cook, stirring, until the eggs are no longer runny, about 3-4 minutes.
Remove from pan and serve.
Suggested Serving: Serve with toast and fruit.
It's really good if you take this mixture and soak the toast in it. Then fry it with a spray of pam. Use o calorie pancake syrup. Mmm mm.
