Greek Green Beans (0 points)

4 servings (1/4 mixture each)


Ingredients:

1/2 small onion, chopped

1 tsp minced garlic

2 cups fresh green beans, trimmed and cut in half

14 oz can diced tomatoes

1 tsp dried oregano


Directions:

Heat a large, lightly sprayed, skillet on medium high heat.

Add the onion and cook until transparent, about 3 minutes.

Add the garlic and cook for another minute.

Add the green beans, canned tomatoes and dried oregano.

Stir to mix, cover, reduce the heat to low and simmer until the green beans are tender, about 30 minutes.


Suggested Serving: Serve with crumbled light feta.
