Greek Roasted Chicken (1 personal point)

Ingredients:

1 pound chicken breasts

2 cups small red potatoes, cut in half

2 cups artichoke hearts, cut in half

1/2 large yellow onion, sliced

1/4 cup capers, drained

2 medium lemons, juice only

1/2 cup fat free chicken broth

1 tbsp minced garlic

1 tsp dried rosemary

1 tsp dried oregano


Directions:

Preheat oven to 350F. Spray a large roasting pan.

Add chicken, red potatoes, artichoke hearts, sliced onions and capers to the roasting pan. Set aside.

In a small bowl combine the lemon juice, chicken broth, garlic, rosemary and oregano. Stir until mixed. Pour all over the chicken mixture.

Bake for 40-60 minutes, stirring occasionally.


DO NOT USE THE MARINATED PICKLED ARTICHOKES, USE THE PLAIN CANNED ONES.
