6 servings (1 1/2 cups each)
Ingredients:
1 pound ground turkey
1 cup uncooked onion, diced
2 tsp minced garlic
1 14oz can diced tomatoes
1 1/2 tbsp vegetable bouillon
32 oz hot water
2 cup uncooked carrots, sliced
2 tsp italian seasoning
1 bay leaf
1 14 oz can cannellini beans, drained and rinsed
1 14 oz can seasoned french style green beans, drained
Directions:
In a large sprayed soup pot over medium heat, cook the ground turkey with onion, stirring occasionally to break up the meat, until no pink colour remains.
Add the garlic; cook and stir 1 minute. Stir in the tomatoes, bouillion, water, carrots, italian seasoning and bay leaf. Bring to a simmer and cook 10 minutes.
Add the cannelloni and green beans. Simmer for another 10 minutes or until the carrots are soft.
Remove bay leaf and season with salt, pepper and/or red pepper flakes if desired.
Suggested Serving: Serve with grated parmesan cheese.
