Hummingbird Oat Bake (2 points)

Ingredients:

2 cups uncooked rolled oats

36g pecans, chopped

1 tsp baking powder

1 tsp ground cinnamon

1/2 tsp ground nutmeg

1/2 tsp table salt

2 ripe bananas

2 eggs

1/3 cup plain 0% yogurt

1 tsp vanilla extract

2/3 cup crushed pineapple, in juice


Directions:

Preheat the oven to 350F. Prepare a 9" round baking pan by lightly spraying it with oil. Set aside.

To a medium bowl, mix together the oats, pecans, baking powder and salt. Set aside.

Blend together the bananas, eggs, yogurt and vanilla. Add to the oat mixture along with the crushed pineapple and juice. Mix until combined.

Pour the batter into the prepared pan, smooth the top.

Bake for 30-35 minutes until the bake is cooked through.


Suggested Serving: Serve warmed or cold, with additional yogurt, milk, fruit and/or nuts.
