Instant Pot Pepper Steak (2 points)

6 servings (3 oz beef + 1/2 cup vegetables)


Ingredients:

1 pound uncooked lean round steak, cubed

1/2 large uncooked onion, chopped

1 cup fat free beef broth

4 tbsp soy sauce, divided

1 tsp minced garlic

1 tsp minced ginger

2 cups uncooked bell peppers, chopped

1 cup fresh mushrooms, sliced

1 tbsp cornstarch


Directions:

Add the beef and onions to the Instant Pot.

Add the beef broth, soy sauce, garlic and ginger. Stir.

Add and close the lid and set the pressure to high for 15 minutes.

Quick release, remove lid and add the peppers and mushrooms. Set on high pressure for 3 minutes. Quick release.

In a separate bowl, mix the tbsp of cornstarch with the remaining tbsp soy sauce until smooth. Add to the pot and stir until thickened.


Suggested Serving: Serve over cauliflower rice with sliced green onions and a sprinkle of toasted sesame seeds.
