Instant Pot Salsa Verde Pork (1 point)

6 servings (2 oz each)


Ingredients:

1 pound pork tenderloin, 1" cubes

1 tsp ground cumin

1 tsp chili powder

1/2 cup onion, diced

1 tsp minced garlic

1/2 cup salsa verde

1/2 cup fat free chicken broth


Directions:

Add the cumin and chili powder to the pork cubes and rub all over.

Turn your instant pot to sauté and spray lightly with oil. Allow to heat 2-3 minutes.

Add the pork cubes to the instant pot. Turn to sear each side, about 2-3 minutes. Add the diced onion and garlic. Cook for an additional minute.

Add the salsa and chicken broth.

Seal the instant pot and set for 30 minutes. Once finished, let the pot release naturally, about 10-15 minutes.

Remove the pork and shred with 2 forks. Add back in some of the liquid.

If you want to crisp the edges, place the meat on a foil lined baking sheet and broil under high heat for 3-5 minutes.


If you do not have an instant pot, you can prepare this in the slow cooker on high for 2-3 hours or low for 6-8 hours.


Suggested Serving: Serve on tortillas with shredded cheese, tomatoes, red onion, more salsa verde and plain fat free greek yogurt.
