Italian Fried Rice (3 points)

2 servings (1/2 mixture each)


Ingredients:

0.5 oz onion, diced

0.5 oz peppers, diced

1 tsp minced garlic

3 eggs

8 oz cooked rice

1 tsp italian seasonings

1 tbsp tomato paste


Directions:

Heat a large sprayed skillet to a medium high heat.

Add the onion and peppers. Cook until onions start to turn translucent, about 3 minutes. Add the minced garlic. Cook for another minute.

Crack the eggs into the hot pan. Scramble the egg. Saute until the eggs are cooked.

Add in the cooked rice, seasoning and tomato paste.

Cook until heated through.


Suggested Serving: Serve with a sprinkle of parmesan cheese.
