Ingredients:
1 pound ground chicken breast
1/2 cup red onion, chopped
1/2 cup sweet red pepper, chopped
1 1/2 tbsp soy sauce
2 tsp jerk seasoning
2 tsp garlic, minced
1 tsp ginger root, minced
1/4 cup cilantro, chopped
12 lettuce leaves, large
Directions:
Spray a large skillet and set on medium high heat.
Add the ground chicken breast and cook until not pink, about 5 minutes.
Add the red onion and red pepper and cook for another couple of minutes.
Add the soy sauce, jerk seasoning, garlic and ginger. Cook for another minute.
Fold in the mango and cilantro. Cook until heated through.
Serve in lettuce leaves.
Suggested Serving: Serve with a sprinkle of green onions, sugar free ginger orange marinade and pineapple cauliflower rice (see recipe).
