Kale and Cheddar Egg Bake

8 servings (1 each)


Ingredients:

5 oz kale, center rib removed, chopped

4 scallions, sliced

2 tsp minced garlic

6 large eggs

1 carton (500g) egg whites

1 cup fat free cottage cheese

3/4 cup light cheddar, shredded

1 tbsp greek seasoning


Directions:

Preheat the oven to 375F. Prepare a 9" x 11" rectangular baking pan by lightly spraing with oil. Set aside.

To a large sprayed skillet, add the kale, onions and garlic. Saute until the kale is tender and wilted. Add to the baking pan. Set aside.

To a large blender, add the eggs, egg whites and cottage cheese. Blend until the cottage cheese is broken down. Pour over the kale mixture.

Sprinkle the cheese and seasoning over top and bake for 25-30 minutes or until golden and cooked through.
