Kodiak Banana Muffins (1 point)

Ingredients:

12 tbsp kodiak mix

2 tbsp splenda

1/2 tsp baking powder

2 bananas, ripe and mashed

2 eggs

1/2 tsp vanilla extract


Directions:

Preheat oven to 350F. Prepare a muffin tin by spraying 6 wells lightly with oil or lining with parchment cups. Set aside.

Add the kodiak mix, splenda and baking powder to a medium bowl and mix until combined.

Add the bananas, eggs and vanilla extract. Mix until just combined.

Fold in any add-ins and divide the batter evenly into the 6 prepared wells.

Bake for 20-25 minutes or golden brown and a toothpick inserted into the center comes out clean.


Suggested Serving: You can use add 1/2-3/4 cup of any add-ins you like. Make sure to add points if necessary.
