Ingredients:
1/4 cup soy sauce
2 tbsp water
1 tsp toasted sesame oil
1/2 tsp red pepper flakes
1 pound ground turkey (or chicken) breast
1/4 cup uncooked onion, chopped
2 tsp minced garlic
1 tsp minced ginger root
Directions:
Combine the soy sauce, 2 tbsp water, sesame oil and red pepper flakes in a small bowl.
Heat a large skillet over high heat, spray with oil and add the ground turkey. Cook, breaking the meat up with a wooden spoon until cooked through, about 5 minutes.
Add the onion, garlic and ginger and cook 1 minute.
Pour the sauce over the meat, cover and simmer on low heat 10 minutes.
Suggested Serving: Divide the meat into 4 equal portions. Assemble bowls as follows... meat, heated riced cauliflower, chopped apple (tossed in lemon juice), cooked peas or edamame. Top with an over easy fried egg, chopped green onions and toasted sesame seeds. Slice up the egg and mix into bowl.
