Chicken Wonton Soup (2 points)

4 servings (4 wontons,1/4 chicken/veggies/broth)


Ingredients:

5 cups fat free chicken broth

1 tbsp soy sauce

1 tsp minced garlic

1 tsp minced ginger

1 tsp sesame oil

1/2 cup broccoli, florets

1/2 cup carrots, sliced

1/2 cup uncooked peas, or frozen

16 chicken and vegetable mini wontons

6 oz cooked chicken, cubed

1/2 cup mushrooms, sliced


Directions:

Bring broth to a boil. Add the soy sauce, garlic, ginger, sesame oil, broccoli, carrots and peas. Let boil 2 minutes.

Add in the wontons, let boil for another 5 minutes.

Add in the cooked chicken and mushrooms and boil for another 3 minutes.


Suggested Serving: Serve with a sprinkle of green onions, sesame seeds and rice crackers.


Variations:

Shrimp - substitute the cooked chicken with uncooked deveined shrimp and the peas with sliced baby bok choy.
