Lemon Blueberry Ricotta Bake (6 points)

Ingredients:

1 oz uncooked rolled oats

1/2 tsp baking powder

1/8 tsp table salt

3 oz banana, ripe and mashed

2 oz 10% ricotta cheese

1 large egg

1 tsp fresh lemon juice

1 tsp lemon zest

1 tsp vanilla extract

2 oz fresh or frozen blueberries


Directions:

Preheat oven to 350F. Prepare a 6" baking dish or a 4" mini springform pan by lightly spraying with oil.

In a medium bowl, combine the oats, baking powder and salt. Set aside.

In another medium bowl, combine the mashed banana, ricotta cheese, egg, lemon juice and zest plus vanilla.

Add the dry ingredients to the wet. Mix well and then fold in the blueberries.

Pour the batter into the prepared pan. Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean.


Suggested Serving: Serve with cream cheese and or nuts and a few berries.

Can i use cottage cheese instead of ricotta?

Sure but you will want to blend it to break down the curds first :)
