Mexican Cheese Stuffed Meatballs (2 points)

4 servings (3 meatballs each)
Ingredients:
1 pound ground turkey breast
1/4 cup bread crumbs
1 egg
1/4 tsp table salt
2 tbsp cilantro paste
1 tsp ground cumin
1 tsp dried oregano
1 tsp paprika
2 tsp minced garlic
2 tsp chili powder
1 tsp onion powder
3 sticks jalapeno cheese strings, divided
Directions:
Combine the ground turkey, bread crumbs, egg, cilantro paste, garlic and spices in a medium bowl, mixing until thoroughly combined.
Divide into 12 equal meatballs. Wetting your hands while making the meatballs stops them from sticking to your hands.
Cut the 3 mozzarella sticks into 4 pieces each, 12 pieces in total.
Flatten each meatball in the palm of your hand, place a piece of cheese in the center and then wrap the meat around the cheese and reform into a ball.
Place meatballs on a sprayed, parchment lined or silicon mat cookie sheet.
Bake in a 350F preheated oven for 30 minutes, flipping the meatballs over at 15 minutes.
