Mexican Fried Rice (4 points)

2 servings (1/2 recipe each)


Ingredients:

2 tbsp red onion, diced

3 large eggs, slightly beaten

8 oz cooked brown rice

1/4 tsp ground cumin

1/2 cup sugar free salsa


Directions:

In a large sprayed skillet, over medium high heat, add the onion. Cook for a minute.

Add the eggs and cook, stirring, until the eggs are no longer runny.

Add the cooked rice, stir, add the salsa, stir and cook until heated through.


Suggested Serving: Serve with shredded cheese on top and fruit on the side.
