Ingredients:
1 tbsp sesame oil, divided
1 egg
6 oz chicken breast, cut into strips
3 oz mushrooms, sliced thin
3 oz snow peas
6 oz coleslaw mix
1 tsp minced ginger
1 tsp minced garlic
2 tbsp soy sauce
1 tbsp hoisin sauce
1/2 tbsp oyster sauce
Directions:
Add 1 tsp of sesame oil to a large skillet over medium high heat. Pour in the beaten egg and cook until set, then flip to cook on the other side. Remove to a cutting board and cut into strips. Set aside.
To the same skillet, add another tsp of sesame oil. On medium high heat, add the chicken strips. Cook until the meat is cooked through and no longer pink, about 5 minutes. Set aside.
To the same skillet, add the last tsp of oil, then add the mushrooms, snow peas, shredded coleslaw mix, ginger and garlic. Stir fry until slightly wilted. Add the cooked eggs and chicken. Mix together.
In a small bowl, whisk together the soy sauce, hoisin and oyster sauce. Add to the pan and stir fry until fragrant and warmed through.
Suggested Serving: Serve with almonds, toasted sesame seeds and sliced green onions.
