Oat Groat Salad (0 personal points)

6 servings (1/2 cup each)


Ingredients:

1 cup uncooked oat groats

1/2 cup uncooked zucchini, chopped

1/4 cup uncooked carrots, chopped

1/4 cup uncooked celery, chopped

1/4 cup frozen green peas

2 medium scallions, sliced

1 tbsp fresh lemon juice

1 tbsp rice vinegar

1 tsp olive oil

2 tsp fresh thyme leaves


Directions:

Add the oat groats to a large saucepan and cover with plenty of water.Bring to a boil and simmer for 30 minutes.

I used a double boiler strainer and steamed my chopped zucchini, carrots, celery and peas for 2 minutes. Set aside.

Rinse the cooked oat groats in cold water, drain and add to a medium bowl.

Add the cooked steamed veggies and the sliced scallions. Set aside.

In a small container, mix together the vinegar, lemon juice and olive oil. Pour over the oat groat and veggie mixture. Add the thyme. Season with salt and pepper. Mix well.


Suggested Serving: Great side dish. Serve over lettuce, with sliced cucumber, tomato and a drizzle of balsamic vinegar.
