3 servings (2 cookies each)
Ingredients:
1/2 cup uncooked quick oats
1 tbsp date powder
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1 egg
2 tbsp 0% siggi's yogurt
1 medium apple, grated
1/2 cup blueberries
Directions:
Preheat the oven to 350F. Prepare a baking sheet by lightly spraying with oil. Set aside.
In a medium bowl, mix the oatmeal, date powder, cinnamon and nutmeg. Set aside.
In a small bowl, whisk up the egg and yogurt. Add to the dry ingredients and mix well.
Fold in the grated apple and blueberries. Divide the batter into 6 equal amounts and shape into cookie shapes on the prepared baking sheet.
Bake for 25 minutes or air fry @350F for 10-15 minutes.
Suggested Serving: Serve with yogurt and/or fruit.
