Ingredients:
3/4 cup quick oats
1 medium banana, ripe
1 egg white
1 egg
3 tbsp swerve brown sugar
1/4 cup plain fat free greek yogurt
1 tsp vanilla extract
1 tsp baking powder
1/4 tsp baking soda
1/4 table salt
Directions:
Preheat oven to 350F. Lightly spray 2, 6 hole donut pans. Set aside.
Add oats to a blender and blend until oats are broken down. Set aside.
In a bowl, mash a banana with a fork until smooth.
Add the eggs white and whole egg to the mashed banana, whisking until well blended.
Add the sugar, yogurt and vanilla extract. Stir well.
Stir in the oat flour, baking powder, baking soda and salt. Mix just until combined.
Divide the batter evenly into 10 or the 12 donut molds.
Bake donuts for 15 minutes or until a toothpick inserted into the center comes out clean.
Allow the donuts to cool before removing them from the pan.
Made these late last night and enjoyed them today! I used the air fryer to crisp them up a bit and then used a tsp of pistachio pudding mixed with 2 tablespoons almond milk to make a glaze for them--yum!
