Oatmeal Lentil Bars (1 personal point)

Ingredients:

1/2 cup red split lentils

1 cup powdered peanut butter

1/2 cup water

1 1/2 cups old fashioned oats

1/2 cup splenda

1/4 cup kodiak mix

1/2 tsp baking soda

1/4 tsp salt

1 large egg

1/2 cup unsweetened applesauce

1 tsp vanilla extract

1/4 cup no sugar added chocolate chips


Directions:

Preheat oven to 350F. Lightly spray an 8"x 8" square baking pan and set aside.

Rinse the lentils and place in a small saucepan. Cover with 1 1/2 cups water and bring to a boil. Cover, reduce heat and simmer for 10-15 minutes or until most of the water is absorbed and the lentils are soft. Drain and set aside until cool.

Mix together the powdered peanut butter and water. Set aside.

To a food processor bowl, add the cooked lentils, peanut butter, 1 cup of oats, kodiak mix, splenda, baking soda, salt, egg, applesauce and vanilla. Process until well blended.

Add the remaining 1/2 cup oats and chocolate chips and mix.

Pour into your prepared baking pan.

Bake for 30 minutes. Cool and cut into bars.
