Oatmeal Protein Crepes (1 point)

2 servings (1/2 total crepes each)


1/4 cup good protein vanilla protein powder

2 eggs

1/2 cup fat free cottage cheese

1/2 banana, ripe

1/4 cup unsweetened almond milk

2 tbsp uncooked quick oats

1 tbsp tapioca flour

1/2 tsp ground cinnamon

1 pinch table salt


Add all the ingredients to a blender and blend until smooth and creamy.

Let the batter rest for 5 minutes.

Heat a lightly sprayed non-stick pan over medium high heat.

Pour about 3-4 tbsp of batter into the pan and rotate to create a thin layer of batter. Once you can move the crepe around, flip.


Suggested Serving: Serve with fruit, whipped cream and chocolate maple syrup.
