Ingredients:
4 oz cooked brown rice
1 tbsp soy sauce
2 large eggs
2 tbsp water
1/8 tsp table salt
1/8 tsp black pepper
Directions:
In a small skillet, lightly sprayed with oil, saute the cooked rice and until heated through. Add the soy sauce and mix. Remove from skillet and set aside.
Whisk the eggs, water, salt and pepper. Set aside.
Wipe the skillet out and spray lightly with oil. Heat on medium high heat. Add the egg mixture.
As the eggs set, push cooked edges towards the center, letting uncooked portion flow underneath. When eggs are set, spoon rice mixture on one side; fold over the other side over top the rice filling. Slide omelet onto a plate.
Suggested Serving: Serve with salsa.
