Parmesan Zucchini (3 points)

2 servings (1/2 recipe)


Ingredients:

1/2 oz light parmesan cheese

1/2 tsp garlic powder

1/4 tsp onion powder

1/4 tsp italian seasoning

1/8 tsp table salt

12 oz uncooked zucchini

1 tbsp light butter, melted


Directions:

Preheat oven to 425F. Prepare a baking sheet by lightly spraying it with oil. Set aside.

Add the cheese and spices to a small bowl and mix. Sprinkle on to the prepared baking sheet.

Slice and discard the ends of your zucchini. Cut in half lengthwise, then cut each half into about 2" pieces widthwise.

Place zucchini, cut side down, onto the cheese mixture. Brush each piece with melted butter.

Bake until tender, about 20 minutes.


Suggested Serving: Drizzle with parmesan caesar vinaigrette.
