Peanut Butter Meatballs (0 personal points)

4 servings (5 meatballs each)


Ingredients:

1 pound ground turkey (or chicken) breast

2 tbsp powdered peanut butter

1 tbsp splenda

1 1/2 tbsp soy sauce

1 tsp minced garlic

1 tsp minced ginger


Directions:

Preheat the oven to 350F. Line a cookie sheet with foil and spray with oil. Set aside.

Make the meatballs by adding all the ingredients together. Mix until combined.

With wet hands, roll into 20 meatballs (around 1 tbsp) and place on the prepared cookie sheet.

Bake for 20 minutes, flipping halfway through, or until the meatballs are cooked through.


Serving Suggestion: Serve with pineapple cauliflower rice and peanut sauce (see recipes).
