Ingredients:
1 cup fat free cottage cheese
2 eggs
1 tsp vanilla
1/2 cup kodiak mix
1/2 cup splenda
1/4 cup unsweetened cocoa
2 tsp baking powder
2/3 cup powdered peanut butter
1/3 cup water
1 tbsp no sugar added pancake syrup
1 pinch table salt
Directions:
Preheat oven to 300F. Spray an 8"x 8" square pan and set aside.
Blend together the cottage cheese, eggs and vanilla. Set aside.
In a medium bowl, combine the kodiak mix, cocoa and baking powder.
Add the wet ingredients to the dry ingredients and mix until smooth and combined.
Pour the batter into the baking dish and smooth the surface with a spatula. Set aside.
Mix the peanut powder, water, syrup and salt (add more water by the tsp if necessary to get the desired consistency).
Add dollops of peanut butter on top. Swirl with a knife.
Bake 20-30 minutes or until filling has set but is still soft.
Cut into 8 servings. Eat warm or cold.
