Ingredients:
4 oz bell peppers, sliced
4 oz red onion, sliced
4 oz mushrooms, sliced
10 oz cooked cauliflower rice
6 oz canned tomato sauce
20 slices turkey pepperoni
3 oz light feta, crumbled
2 oz partly skim mozarella
Directions
Preheat the oven to 350F. Prepare 2 large ramekins by lightly spraying them with oil. Set aside.
Lightly spray a large skillet and add the bell peppers, onion and mushrooms. Cook until veggies are soft and lightly browned, about 5-10 minutes. Set aside.
Add half the cauliflower rice to each prepared ramekin. Add half the tomato sauce, smoothing it. Layer 6 pepperoni slices on top and then add half the fried veggies.
Crumble half the feta cheese on top of the veggies and then half the shredded mozarella cheese. Top with the remaining 4 pepperoni slices.
Bake for 30 minutes or until completely warmed through.
