Pizza Egg Rosette Muffins (3 points)

2 servings (2 muffins each)


Ingredients:

4 large eggs

1 tsp italian seasoning

12 slices turkey pepperoni, chopped

1 lavash bread

38g light mozarella, shredded


Directions:

Preheat the oven to 350F. Prepare 4 wells of a muffin tin by lightly spraying it with oil. Set aside.

Whisk uo the eggs with the italian seasoning. Add the chopped pepperoni, mix and set aside.

Cut the lavash bread in half and lay one half on top of the other. Roll up the bread, on the shorter side, cut into 4 pieces. Add one of the rolled bread to each of the 4 wells of the prepared pan.

Divide and spoon the egg mixture, equally, into each muffin well.

Divide and sprinkle the shredded cheese on top of each muffin.

Bake for 20 minutes or until the egg is set and cooked through.


Suggested Serving: Serve with pizza sauce for dipping.

Where do you find your lavash bread?

I bought it at my local health food store but you can get it online at the low carb grocery :)
