Ingredients:
1 cup carbquick baking mix
3/4 cup plain fat free greek yogurt
3 tbsp italian seasoning
99 gm italian shredded cheese
3 sticks turkey pepperoni, chopped
Directions:
Preheat oven to 375F. Place parchment paper or a silicon mat on a baking sheet. Set aside.
In a medium bowl, combine the carbquick baking mix and yogurt. Mix with a fork until well combined.
Place dough on the prepared baking sheet. Using your wet hands, press the dough into a roughly 10" by 8" rectangle.
Spray the dough lightly with oil. Sprinkle on the italian seasoning, then the shredded cheese and then the chopped pepperoni.
Bake for 15-20 minutes until cheese is melted and the crust is a golden brown.
Cool completely and cut into 20, 1" by 4" fingers.
Serve warm or cold with a tomato sauce dip.
