6 servings (1 1/2 cups each)
Ingredients:
1 pound ground turkey breast, see turkey "chorizo" sausage recipe
5 sticks turkey pepperoni
1/2 cup uncooked onion, chopped
4 tsp minced garlic
14 oz canned mushrooms, drained
2 tsp italian seasonings
6 cups fat free chicken broth
14 oz diced tomatoes
14 oz tomato sauce
Directions:
Spray a large saucepan and heat over medium high heat. Add the prepared turkey "chorizo" sausage and cook until almost cooked through, breaking up the meat as it cooks.
Add the sliced turkey pepperoni and continue to cook for about 3 minutes. Remove meat from the pan and place them into a bowl. Set aside.
Add the onions and saute until translucent, about 3 minutes. Add in the garlic and cook for another minute.
Stir in the canned mushrooms and then add the italian seasoning, sausage and pepperoni.
Pour in the chicken broth, diced tomatoes and tomato sauce. Bring to a boil, reduce to a simmer, and cook for 45 minutes.
Suggested Serving: Serve with cheese & garlic pita wedges.
