Poppy Seed Banana Muffins (1 point)

6 servings (1 muffin each)


Ingredients:

1/2 cup kodiak pancake mix

2 tbsp poppy seeds

1/2 tsp baking powder

1/2 tsp ground cinnamon

2 large bananas

2 eggs


Directions:

Preheat the oven to 350F. Prepare a 12 hole muffin tin by lightly spraying or lining 6 holes with parchment paper cups. Set aside.

To a medium bowl, add the kodiak mix, poppy seeds, baking powder and cinnamon. Mix together and set aside.

To a blender, add the ripe bananas and eggs. Blend until mixed. Add to the dry ingredients and mix until just combined.

Divide the batter, evenly, into the prepared pan. Bake for 20-25 minutes or until golden brown and cooked through.
