Poppy Seed Banana Muffins

6 servings (1 muffin each)


Ingredients:

1 cup kodiak pancake mix

1 tbsp date powder

1 tbsp poppy seeds

1/2 tsp baking powder

1/2 tsp ground cinnamon

2 bananas

2 tbsp olive oil

1/4 cup unsweetened almond milk

1 egg

1/2 tsp vanilla extract


Directions:

Preheat the oven to 350F. Prepare a 12 hole muffin tin by lightly spraying or lining 6 holes with parchment paper cups. Set aside.

To a medium bowl, add the kodiak mix, date powder, poppy seeds, baking powder and cinnamon. Mix together and set aside.

To a blender, add the ripe bananas, olive oil, milk, egg and vanilla. Blend until mixed. Add to the dry ingredients and mix until just combined.

Divide the batter, evenly, into the prepared pan. Bake for 20-25 minutes or until golden brown and cooked through.
