Pork Souvlaki (0 points)

4 servings (1/4 mixture each)


Ingredients:

1 pound pork tenderloin, cubed

1 tbsp minced garlic

1 tsp greek seasoning

2 tbsp red wine vinegar

2 tbsp soy sauce

1/2 lemon, juice and zest

1 tsp table salt

1/2 tsp black pepper


Directions:

Combine everything in a large container and toss until the pork is evenly coated.

Seal/cover and refrigerate for 30 minutes, or up to a day.

Remove pork and discard the leftover marinade.

Pork can be threaded onto skewers and cooked on a grill or broiled in the oven until the pork is cooked through.

Or the pork chunks can be air fried or pan fried until cooked through.


Suggested Serving: Serve with cauliflower rice, pitas and feta yogurt sauce.


Variations:

Chicken - substitute the pork tenderloin with chicken breasts
