Potato Hash Brown Waffles (5 points)

1 serving (1/2 large or 2 mini waffles)


Ingredients:

4 oz uncooked potato, shredded

1 oz light cheddar cheese, shredded

1 large egg

1/2 tsp garlic powder

1/4 tsp onion powder


Directions:

Using a cloth or paper towel, wring moisture out of shredded potatoes.

Add the shredded cheese, egg, garlic and onion powder. Mix ingredients.

Spray non-stick cooking spray on a hot waffle iron (large or mini).

Add potato mixture and cook until crispy.


Suggested Serving: Serve with green onion/chives and salsa.


Variations: You can use shredded sweet potatoes or yams.
