Ingredients:
1 1/4 cups kodiak mix
1/2 cup splenda
1 tsp baking powder
1/2 tsp table salt
2 bananas, ripe
2 large eggs
1/3 cup unsweetened almond milk
1 tsp vanilla extract
1/3 cup unsweetened cocoa
1/3 cup unsweetened applesauce
1/3 cup pumpkin puree
1 tsp pumpkin pie spice
Directions:
Preheat oven to 350F. Spray a 8" x 8" square pan. Set aside.
In a medium bowl, mix together the kodiak mix, splenda, baking powder and salt. Set aside.
In another bowl, mix the bananas with a mixer until they are mashed. Add the eggs, almond milk and vanilla. Mix.
Add the dry ingredients to the wet and mix until combined.
Divide the batter in half. Add the cocoa and applesauce to one half and mix well. Set aside.
Add the pumpkin puree and pumpkin pie spice to the other half of the batter. Mix well. Set aside.
Pour half the chocolate batter into the prepared pan and smooth.
Add half of the pumpkin spice batter on top of the chocolate batter in the pan and smooth.
Then alternate blobs of the chocolate and pumpkin batter on top of the layers in the pan and then drag a knife through it to make a swirling pattern.
Bake for 30-40 minutes or until a toothpick inserted into the center comes back clean.
