Ingredients:
2 cups uncooked oats
1 scoop good protein creamy vanilla protein
2 tsp baking powder
2 tsp pumpkin pie spice
1/2 tsp ground cinnamon
1/4 tsp table salt
1 1/4 cups unsweetened almond milk
1 cup pumpkin puree
1 banana, ripe
2 eggs
2 tsp vanilla extract
Directions:
Preheat the oven to 350F. Prepare a 9" round deep dish pan by lightly spraying it with oil. Set aside.
In a large bowl, combine the oats, protein powder, baking powder, pumpkin pie spice, cinnamon and salt. Mix and set aside.
In a blender, add the milk, pumpkin puree, banana, eggs and vanilla. Blend until mixed.
Add the wet ingredients to the dry ingredients. Mix until combined. Pour into the prepared pan.
Bake for 35-40 minutes or until cooked through.
