Refried Black Bean Soup (1 point)

6 servings (1 1/2 cups each)


Ingredients:

2 cups low fat refried black beans

2 cups black beans, drained and rinsed

2 cups frozen corn

2 cups fat free chicken broth

1 cup fire roasted tomatoes

1 cup tomato sauce

1/2 cup chopped green chilies

1/4 cup salsa

1 tsp ground chili powder

1 tsp ground cumin

1 tsp smoked paprika

1 tsp franks hot sauce

1/2 tsp oregano


Directions:

Add all the ingredients into a large soup pot. Mix.

Heat on high until the soup starts to boil, cover and turn down to simmer.

Cook until heated through.


Suggested Serving: Serve with a dollop of 0% greek yogurt and sliced green onions.
