Ingredients:
6 plain rice cakes
1 cup pb & me peanut powder
1/2 cup water
45g mini chocolate chips
3 pinches coarse salt
Directions:
Prepare an 8" x 8" square pan by lining it with parchment. Set aside.
In a medium bowl, crumble the 6 rice cakes. Set aside.
Make up the powdered peanut butter by combining the powder with the water and mixing until smooth.
Add the peanut butter to the rice cakes. Mix together and press into the prepared pan. Set aside.
Melt the chocolate chips by placing them in a small microwavable bowl and microwave for 30 seconds on 30% power. Stir well and continue to microwave in 30 second intervals until chocolate is completely melted.
Drizzle on the chocolate and sprinkle the squares with sea salt. Freeze for an hour. Cut into squares.
Suggested Serving: You can store these in the fridge or freezer (thaw before eating).
