Rice Paper Omelette (2 points)

1 serving


Ingredients:

2 eggs

1 tbsp water

1 sheet rice paper

1/4 cup frozen spinach, thawed

31g deli ham slice, chopped

13g light tex mex cheese, shredded

1 scallion, sliced


Directions:

Whisk up your 2 eggs with the water. Set aside.

Heat up a large lightly sprayed skillet on medium heat.

Place your rice paper in the bottom of the pan.

Pour the egg mixture on top of the rice paper. Spread the eggs to completely cover the rice paper.

Sprinkle the spinach, ham, cheese and scallions on top of the eggs.

Cook until the egg is set. Using your spatula, fold the egg in half.

Continue cooking until the rice paper is crispy and the eggs are cooked but soft.
