Rustic Cottage Cheese Bread (3 points)

8 servings (1 slice each)


Ingredients:

3 3/4 cups old fashioned oats

1 tsp baking powder

1/2 tsp table salt

500g tub fat free cottage cheese

3 large eggs


Directions:

Preheat the oven to 350F and prepare a baking sheet by lightly spraying it with oil or lining it with parchment paper.

In a large bowl, combine all the ingredients and mix well.

Add the batter to the prepared baking sheet and shape into a heaped rustic loaf, around 8 inches long.

Bake for an hour. Cover with tin foil if the loaf appears to brown too quickly.

Slice when cool.
