Savoury Italian Oatmeal (4 points)

2 servings (1/2 mixture each)


Ingredients:

1 tsp minced garlic

1 tsp italian seasoning

2 oz uncooked rolled oats

1 1/2 cups fat free chicken broth

1 oz mushrooms, chopped

1 oz parmesan cheese

1 oz spinach, chopped

2 halves sundried tomatoes, chopped


Directions:

Heat up a lightly sprayed medium saucepan over medium heat. Add minced garlic and italian seasoning. Saute for a minute.

Add the oats and stir to combine. Pour in the chicken broth and mushrooms. Stir, increase the heat to medium high and bring to a boil. Decrease the heat to low and simmer until oats are cooked through, about 8 minutes.

Stir in the grated cheese, spinach and sundried tomatoes. Stir until spinach is wilted.

Separate into 2 bowls.
