Savoury Sausage, Cheese and Oat Muffins (1 personal point)

Ingredients:

5 turkey breakfast sausage links

1 1/2 cups old fashioned oats

1 cup kodiak mix

3 tbsp light parmesan cheese

2 tbsp dried chives

2 tsp baking powder

1 tsp baking soda

1 tsp garlic powder

1 tsp onion powder

1/2 tsp table salt

2 large eggs

1 cup almond milk

2/3 cup plain fat free greek yogurt


Directions:

Preheat oven to 350F. Prepare a 12 well muffin tin by spraying lightly with oil. Set aside.

Remove the casings from the turkey breakfast sausage and add to a sprayed small skillet on medium high. Cook on medium high until browned and cooked through. Set aside.

Add the dry ingredients into a bowl and mix to combine. Set aside.

Add the eggs, milk and yogurt to another bowl and whisk until smooth.

Add the wet ingredients to the dry ingredients and mix until combined.

Fold in the cooled cooked sausage.

Divide the batter, evenly, into the 12 muffin tin holes.

Bake 25-30 minutes or until golden brown and cooked through.
