Ingredients:
1/2 medium uncooked onion, chopped
1/2 medium uncooked bell pepper, chopped
2 tsp minced garlic
1 tsp paprika
1/2 tsp ground coriander
1/2 tsp ground cumin
1/8 tsp chili powder
1 pinch red pepper flakes
14 oz can crushed tomatoes
3 large eggs
Directions:
Heat a lightly sprayed medium skillet on medium high heat. Add the onion and peppers and cook for 5 minutes or until the onions are soft and translucent.
Add the garlic and spices and cook for an additional minute.
Pour the can of tomatoes into the pan, bring the sauce to a simmer, stirring occasionally.
Use a large spoon to make small wells in the sauce and crack the eggs into the wells. Cover the pan and cook for 5-8 minutes or until the eggs are done to your liking.
Suggested Serving: Serve with warm bread, wraps or biscuits.
