Sloppy Lennys (1 point)

3 servings (heaping 1/2 cup each)


Ingredients:

1/2 cup uncooked onion, chopped

1/2 cup red pepper, chopped

1 tbsp chili powder

2 cups water

1/2 cup red split lentils

4 tbsp spicy ketchup

1 tbsp mustard

1 tbsp date powder

1 tbsp soy sauce

1 tbsp vinegar

1 tsp table salt

1/2 tsp black pepper


Directions:

Heat a large sprayed saucepan on medium high heat. Add onion and red pepper. Cook until soft, 5-7 minutes.

Add the chili powder and cook until fragrant, about 1 minute.

Add the water, lentils, ketchup, mustard, date powder, soy sauce, vinegar, salt and pepper.

Bring to a boil, then reduce heat to medium low and cook, stirring occasionally, until the lentils are tender and falling apart, about 20-25 minutes.


Suggested Serving: Serve on toasted bread, buns, over salad or all on it's own like a stew.
