Slow Cooker Butter Chicken (0 points)

4 servings (1/2 cup each)


Ingredients:

4 chicken breasts, cut into 1" cubes

1 tbsp fresh lemon juice

2 tsp ground cumin

2 tsp garam masala

1 tsp ground coriander

1 tsp table salt

1/2 tsp black pepper

1/2 tsp ground tumeric

1/2 tsp ground cinnamon

1/8 tsp cayenne pepper

1/2 cup onion, diced

1 tbsp garlic, minced

1 tbsp ginger root, minced

2 tbsp splenda

14 oz can crushed tomatoes

1/2 cup plain fat free greek yogurt


Directions:

Place cubes of chicken, lemon juice and all the dried spices into the slow cooker. Stir to coat all the chicken pieces. Let marinate for 30 minutes.

Add the onion, garlic, ginger, splenda and crushed tomatoes. Mix well. Turn slow cooker on high.

Cook for 2 hours or until chicken is cooked through and sauce is thickened.

Turn off slow cooker and cool mixture for about 10 minutes before adding the yogurt. Mix well and serve.


Suggested Serving: Serve with rice, cauliflower rice or palmini rice and peas. Add some chopped fresh cilantro and a squeeze of lime.
