Slow Cooker Pulled Pork (2 points)

Ingredients:

2-1 pound lean pork tenderloins

1 tbsp paprika

1 tbsp dry mustard

2 tsp table salt

2 tsp black pepper

1 tsp ground cumin

1 tsp onion powder

1 tsp garlic powder

2 tbsp swerve brown sugar

3/4 cup fat free chicken broth

1/4 cup sugar free bbq sauce

1 tbsp hot sauce


Directions:

Mix the spices and sugar together in a small bowl. Mix the chicken broth, BBQ sauce and hot sauce in another bowl. Set aside.

Spray the tenderloin(s) lightly and coat all sides of the tenderloin with the spice mixture.

Spray a skillet and heat on medium high. Sear the pork tenderloin on all sides.

Add tenderloin(s) to a slow cooker. Pour the sauce mixture over top. Cook on low for 3-4 hours or high for 2-2.5 hours or until the pork tenderloin is cooked through.

Using 2 forks, pull your pork apart.


Notes:

Serve with more BBQ sauce and coleslaw on a bun/pita or crisped up under a broiler, then served on a tortilla with coleslaw and salsa.
