4 servings (heaping 1/2 cup)
Ingredients:
12 oz chicken breast, cubed
1/2 cup chicken broth
1/3 cup apple cider vinegar
1/3 cup tomato sauce
1/4 cup date powder
3 tbsp soy sauce
1 cup pineapple chunks, drained
1/2 cup bell pepper, chopped
1/2 cup uncooked carrot, chopped
1/2 cup uncooked celery, chopped
1/2 cup uncooked onion, chopped
1 tsp ginger, minced
1 tsp garlic, minced
1 tbsp cornstarch
2 tbsp water
Directions:
Add all the ingredients except the cornstarch and water into the slow cooker.
Mix well. Cook on high for 2-3 hours or on low for 5-6 hours.
About 1/2 hour before serving, turn slow cooker to high. Mix the cornstarch with water to make a slurry. Add to the slow cooker and mix well.
After mixture has thickened it is ready to be served.
Suggested Serving: Serve over plain or fried cauliflower/jasmine rice.
Sounds delicious but I would probably eat at least a cup of it, maybe 1 1/2 cups. I think only the cornstarch has points--would that make it 1 point at some point?
I made in my instant pot cooked on high for 15 mins. Worked out great.
