6 servings (2 pancakes each)
Ingredients:
2 eggs
1/2 cup 0 % plain siggi's yogurt
1/3 cup unsweetened almond milk
1 tsp vanilla extract
1/8 tsp almond extract
1 cup spelt flour
1 1/2 tsp baking powder
1/2 tsp table salt
Put all the ingredients into a blender, wet ingredients first and blend until mixed well.
Heat a lightly sprayed large skillet on medium high heat.
Drop a couple of heaping tbsp of batter into the hot skillet.
Cook until the edges look cooked, then flip carefully and cook until pancakes are cooked through.
Suggested Serving: Serve with fruit and maple syrup.
