Ingredients:
8 oz pork tenderloin, cubed
1/4 cup fresh lemon juice
2 tbsp no added sugar pancake syrup
1 tsp ground cinnamon
1 tsp ground cumin
1/2 tsp smoked paprika
1/2 tsp red pepper flakes
1/2 tsp salt
1/2 tsp black pepper
24 g dried apricots, chopped
Directions:
Place cubed pork into a container and set aside.
In a small bowl whisk together the lemon juice, syrup and spices. Stir in cilantro and apricots.
Pour over the pork cubes and turn to coat all over. Marinate for 30 minutes up to 24 hours ( the longer, the better!)
Preheat oven to 375F. Arrange pork in a single layer in a shallow sprayed baking dish.
Bake for 45 minutes or until pork is cooked through.
Suggested Serving: Serve on cauliflower rice with a squeeze of lemon and a little chopped cilantro.
