Sweet Potato Baked Oatmeal (1 point)

Ingredients:
3 1/2 cup uncooked rolled oats
11 tsp date powder
2 tsp baking powder
2 tsp pumpkin pie spice
1 tsp table salt
1 cup cooked sweet potato, mashed
1 cup unsweetened almond milk
1/2 cup unsweetened applesauce
2 eggs
1 tsp vanilla extract
Directions:
Preheat the oven to 350F. Prepare a 9" round baking dish by lightly spraying it with oil. Set aside.
Combine, in a large mixing bowl, the rolled oats, date powder, baking powder, spice and salt. Set aside.
Whisk, in a medium mixing bowl, the sweet potato, milk, applesauce, eggs and vanilla.
Add the wet ingredients to the dry and mix until combined. Pour the batter into the prepared dish.
Bake for 30-40 minutes or until cooked through.
Suggested Serving: Serve with cream cheese yogurt frosting/dip (see recipe).
